TOMATO GOJJU

INGREDIENTS :
4-5 tomatoes chopped
1/2 cup onions chopped
1 pinch asafoetida
1/2 tsp coriander powder
1/2 tsp turmeric powder
1 tsp Mustard seeds
1/2 tsp Red chilli powder
1- 2 tsp sambar powder
1/2 tsp jaggery powder
2 tsp oil
Curry leaves
salt as required
coriander for garnishing


METHOD:

Step 1: Heat the oil in a pan add asafoetida, cumin seeds, mustard seeds, onions and saute it well

Step 2: Add tomatoes, red chilli powder, coriander powder, turmeric powder, sambar powder , curry leaves, jaggery, and salt.

Step 3: Mix it all then boil for 30-35 minutes on a low flame

Step 4: serve it with lemon rice or rotis.
